Ingredients
  

  • 2 oz Scotch whisky
  • ¾ oz fresh lemon juice
  • ¾ oz honey-ginger syrup
  • ¼ oz Islay Scotch for the smoky float
  • Ice
  • Lemon twist or candied ginger for garnish

Instructions
 

  • Prepare the Honey-Ginger Syrup: Combine equal parts honey and water in a saucepan, heat until the honey dissolves. Add a few slices of fresh ginger and simmer for about 10 minutes. Strain and let cool.
  • Mix the Cocktail: In a cocktail shaker, combine 2 oz of Scotch whisky, ¾ oz of fresh lemon juice, and ¾ oz of honey-ginger syrup.
  • Shake: Fill the shaker with ice and shake vigorously until well chilled.
  • Strain: Strain the mixture into an old-fashioned glass filled with ice.
  • Float the Smoky Scotch: Gently pour ¼ oz of Islay Scotch over the back of a spoon to float on top of the cocktail.
  • Garnish: Finish with a lemon twist or a piece of candied ginger.
